AUSSIEFLY UPDATE
Hi,
Your orders would have been processed and sent by now (that is for those that did not cancel), but just when Barry was due to return home but he developed Sciatica.
See blog posts links below for more details.
This in turn put him into hospital. He has had an “attack” before, and from what I’m lead to believe is can be extremely painful, as can various types of back pain.
The good news is that he is now on his way back and you will be contacted regarding your order.
Once again we apologise for the delay.

30th Nov 2012 – TXT from Barry’s wife while away …
Hi all,
Just to let you know how bazza is going. He is in hospital til at least monday & will be re-evaluated then. He is being dosed-up with very strong medications that only seem to work for a couple of hours so don’t know how he will go travelling in the car for long periods. He went for 2 sessions in the hydro pool today which tired him out but he is getting more movement at last. Too many pills are making him a bit out of it at times & quite funny. Better news next week we hope.

Still no fishing, as my health is still lousy ! This is the worst year ever for fishing todate.

However there is a positive event in this ‘sick’ time that was a result of a lot of hard work and effort, this is a new product, but first lets slip back a bit in time.

Still no fishing as I still have a sore leg and hip.

So we will talk a little about cooking, cooking on your BBQ if it has a lid of some kind.

Why a lid, thats because we are about to cook bread on your BBQ.

Bread from the BBQ

 The bread, above all its real easy and real quick.

With the advantage you can make any type of bread, and a range you will never see in any shop.

Who mainly sell so called white bread, which is the white death bread to many, because there is nothing in it.

And a bread, you and others will eat, with nothing on the bread, just by its self.

First a couple of ideas, as there are 100′s of different kinds of breads.

 Corn bread, comes with corn nibblets throughout it

Foccacia, that comes with a nice reddish looking flour and sweetish taste,  real Foccacia taste (commercial Foccacia breads are real rubbish, white death with an olive dropped in here and there on top)

There, thats just two of 100′s 

This is what we are about to produce, a Foccacia type of bread

To start,

We use yeast, Lowan, seems to be good and stays fresh nicely, as in the photo, keeps well in freezer.

Flour, bread flour is ideal, why………. because its a strong flour, that is strong/hard flour has a high gluten content, soft flour, low gluten content, which is ideal for cakes etc.

We found, Aldi plain flour is ‘fairly’ hard.

And this is what we have been using.

AND ITS FAR CHEAPER THAN ANY OTHER FLOUR

 No need for self raising flour, just use plain flour.

 Tomato sauce, yes, we use this, no I am not very mad suggesting this

Want a beautiful semi sweet bread with a reddish colour through it, then use Tomato sauce. 

AND a TRUE Foccacia taste, the trick is Tomato sauce.

And I think,  as a bonus it helps keep the bread fresh and moist.

This bread will be suitable for eating for 3 days, yes it will reman fresh for 3 days,

HOWEVER, the bread will be all eaten within the first couple of hours !

This is the reason for making two breads at a time : )

Ideal for taking away for a couple of days camping

AND makes fantastic toast. 

 OK, the above are the main ingredients

The plate the bread is cooked on

a Quarry tile, yes the normal tile you walk on, it has to be dry, well covered with ample flour.

the first couple of cookings, will stick slightly, maybe, as you don’t wash this ‘plate’ the tile the surface will improve with the number of ‘cookings’. 

The BBQ Temp

wouldn’t have a clue and don’t even worry about it.

I light 3 burners for about 10minutes with the lid closed.

Then the bread ‘goes in’ I shut down the third burner and leave the other two running on high

Cooking

Time, as long as you want almost

The longer the crustier the breads top

Normally with these smallish breads only about ten minutes.

You will know how long, by tapping the top of the bread and then you will hear a hollow’ish sound.

Once out of the BBQ, the bread is removed from the tile, which is super hot by now, so extra care or you will be burnt by the tile !!!!

 Remove the bread to a cooling rack.

To make your bread.

In this case, the two tiles as shown.

Only two cups of flour, plain flour.

Good splash of olive oil

(an nice tasting extra, if you chose, peel and cut up some garlic, pour olive oil in a pan and heat up, toss in the garlic, and cook for 5 minutes, turn off and cool,

then when the oil is cool, add this enhanced olive oil to the flour, cooking the garlic in oil, extracts the oil from the garlic, into the olive oil)

 About table spoon at most of milk, (this will make your bread soft, no milk, your bread will came out like normal white bread)

Table spoon of Tomato sauce, more makes even better taste even two spoons full, yum, as above the reason why

Salt, half a tea spoon, (this will help hold your bread together, adds taste.. a must in bread making, even if you don’t like salt to be added to your food, like me)

 All the above are added to your flour.

 Yeast, take a cup, add about 2 tea spoons of yeast, some sugar, some flour, these are required for the yeast to feed on.

Add water, in the summer just plain tap water is warm enough

Allow the yeast to grow, this will be seen as a mass of bubbles in the cup.

 NOW

add the cup to your flour mix

Work it through the mixture collecting the flour from the bottom and the sides of the bowl

 

The mix will seem a little wet and far too sticky, thats normal

As you start to work this flour mix, the flour will absorb the fluids

Maybe a little flour could be added ? 

 Roll out your flour mix, the dough onto a table/bench and start to need it for about 3 minutes, thats all, as its too boring standing there for 10 minutes, for me.

and as a bonus, this needing will clean your fingers and finger nails like nothing else (but don’t tell those who eat your bread)

Cut the dough mix into two sections.

This next step is where you play, what shape do you want ? Roll it out as a long worn and twist it around, as in the photo

Or just cut two lines across the top as in the other bread shown. 

 

Place onto the tiles the two sections

And for a nice look on the breads top,

you could paint it with milk, as in the photos

Water will make it crusty

Or olive oil and the flour

Or just flour

The moisture on the top of the breads adds to easy expansion of the bread as it grows.

 When the bread is about double plus some more, (HERE I FIRE-UP THE BBQ) allow 10 minutes to heat up) its time to add to the BBQ

Corn Bread

no garlic, tomato sauce, nor olive oil

Take a can of corn nibblets, add the fluid to your flour mixture, (lovely corn flavoured water with some extra salt)

Add half the corn

Then its as above.

Heavy rain pelted the van all night and the violent winds never stopped for a moment, as if it was the end of the Earth. We had 56mm of rain during the night and the river is a mess now.

During the day the day changed to a warm’ish and sunny afternoon, funny from one extreme to the other in a couple of hours, as only the mountains can.

As the river was wiped out, next choice has to be the Providence Portal area of the Lake. Starting at 4.30 till 9.30pm saw 4 fish grassed, 3 x Rainbows 41 and 46cm, plus a 53cm Brown, another fatty Brown.

Rain, endless heavy rain all night, pelting down in bucket fulls, last night we had 50mm of rain.

This has resulted in the river being flooded, water everywhere, and its, the river is almost breaking its banks, an amazing sight.

As the river was totally out today we headed into Cooma to see friends and have lunch at the Chinese restaurant at the Bowls Club. Let me tell you, if you want a fantastic Chinese meal where there is that much on the plate, you will think how could I eat all this !

Back at camp by late afternoon, and decided a quick trip to the Portal would be a nice way to finish the day. No fish, not a touch no matter how many flies I tried as the edges were somewhat stirred up and dirty.

And on the way back to camp, in came the storm. Screaming blasts of wind connected to even heavier down pours of rain. A shocker of a trip back.

And now something so strange, its impossible or straight out maddness !

While travelling back to camp I travel down a dirt road, and tonight as I rounded a corner there in the middle of the road, YES in the middle was a Toyota Tarago with the driver in a sleeping bag, the cab light was on and this fellow was reading a book. First thought was, stop and ask him to move as its a dumb place to camp for the evening, more so while its raining heavely as it would be too easy for someone to run into him, his car as I almost did.

Then second thought was, just drive by as anybody camped in the middle of a road, must be on drugs or out of his head. Which I did.

Still fishing the Eucumbene River. Today is as ‘good as it gets’ kind of day, almost no wind and a clear blue sky to shine upon you while casting trying to trick a fish.

And now totally enjoying using this wee little Trout Spey rod of mine.

The rod is coupled to an Airflo Plus 40 Expert Floating fly line, which is constructed like a mini Spey line, a short belly line in 6w.

The Leader, for close or near the surface, I elected to use the Airflo Poly leader 10foot  in floating and for deeper applications a home made Fluorocarbon tapered leader of 12 foot. Both of these Leaders had or has attached to them a tippet of 4 foot with a b/s of 2.5 or 4 pounds.  Average overal length of at least 15feet

This combination gives the caster controlled casting no matter where your standing and no matter what is behind you nor no matter where the wind is coming from, just like the spin fishers have . I cannot understand why more fly fishers in Australia have not discovered the joy of fishing these kinds of rods. Maybe they have listened to the so called gurus of fly fishing in this country for far too long with their endless strange anti Double rod ideas, these poor souls just are all talk but no real clues to help most people !

Started fishing at 11.30 this morning till 2pm.

Score 8 Rainbows between 42 and 47cm and lost 2 other fish, Did I have a good time, you bet ! The fly/s different sizes of Spiders again. Colour, Pink and of course the Black in size #12 and #14.

Now lunch and a couple beers and a mini sleep.

This afternoon started fishing at 4 and finished at 8.15pm. This time I fished down at the Providence Portal. And the result only two very small fish, both Rainbows, so we will not count these in the score.

Monday sees us at Cooma, NSW. Its a beautiful soft but warm day that has greeted us down here.

Refuel, the truck and refood the fridge and next stop our camp site near the river.

Camp up and all in place next thing is a must, go fishing after almost 2 days drive !

And the fishing, what can I say, except bloody fantastic, way better than any first day should or could be, ever.

As the sun set after only a few hours of casting I had tricked 14 Rainbows at between 44 and 50cms, and all were fighting fit and like polished chrome, with tight firm bodies that rocketed into the sky. I dropped 5 fish, mainly on a jump off. All the fish were taken on my Talon Trout Spey, the little Spey rod thats 5/6w and 12 foot long.

If you haven’t used a Trout Spey, YET, you just don’t know the fun and ease of casting and fishing that can and does come from the almost magical rods.

Tonight the rain started, and during the evening this only got heavier and heavier. Well this isn’t nice but this heavy rain will add a flush to the river that could produce a run up of fresh fish.

A trip to out around Mitchell, Queensland out about in the general North West area, about over 180ks from town, in the middle of no where.

And this area is just too far from anywhere for most people, an area covered in rotten feral creatures, an area that only ever sees a couple of hunters a year, that help try and control the numbers while the poor farm tries his best to make a dollar .

The place has so many pigs, cats, goats, rabbits its a barrel running hot day and night.

Speaking of night time, wave a spot light around and you will see so many cats you will think your in the local Council Pound ! Big shining eyes everywhere ! Eyes that are constantly looking for beautiful birds !

That is till they see the flash, and then they see no more.

A couple of the cats removed and a local pig about to go to the long sleep, forever.

How many ferals were removed, we didn’t even count as there were creatures everywhere !

One silly cat that thought it smart to wander around in broad daylight, silly cat.
